First Assignment
Please email or send in your child's favorite lunch or dinner recipe. In hopes of providing better nutrition for your child, I will work with others to find a healthier alternative to what they already enjoy. I am curious to know if they will notice a difference! The deadline for submission will be this upcoming Wednesday, April 14th. Of course, you can add your recipe to this blog! Let's get cookin'!
Meat in a Biscuit- Jake

-10 biscuits flattened in muffin tins
-brown 1 lb. ground beef
-Add 1/2 cup ketchup, 3 tablespoons brown sugar, 1 tablespoon cider vinegar, 1/2 teaspoon chili powder
- Mix together and spoon into biscuits
- Bake at 375 and as directed on biscuits. Approx 20 min.
Chicken and Dumplings- Jake

- 2 to 3 cut celery, 1/2 cut onion- cook until clear
- 6 cups chicken broth
- 1 cup whipping cream
- 1 chicken, deboned and cubed
Mix all until boiling
- cut up 10 biscuits and add to soup
Cook 20 minutes
-add chicken drippings
- salt and pepper to taste.
Sour Cream Coffee Cake- Lexie

1 c. margarine
2 c. sugar
2 eggs
1 c. sour cream
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Topping: 4T sugar and 1 tsp. cinnamon
Mix margarine and sugar together. Add eggs and beat with a mixer. Add sour cream and mix again. Add flour, baking powder, and salt. Beat with a mixer 3-4 minutes. Stir in vanilla. Put 1/2 of topping mixture in bottom of greased bundt pan. Layer 1/2 of cake batter followed by the other 1/2 of the topping mixture. Finish remaining batter. Bake 350 for 50-60 min. Let cool 1 to 2 hours.

ReplyDeleteRoast Vegetable Sauce
1 Small Eggplant, cubed
1 Whole Garlic Clove
1 Tomato, cut into 6 wedges
1 Red Bell Pepper
1 Cup Carrots, chopped
2 Tbsp Olive Oil
1/2 Cup Tomato Sauce
1. Preheat oven to 400 degrees.
2. Place the first 6 ingredients in a large glass dish or cookie sheet and combine. Make sure all of the vegetables are evenly coated with oil.
3. Bake for 45 minutes.
4. Cool for several minutes.
5. Place the vegetables in a food processor with the tomato sauce and puree until smooth.
6. Toss some of the sauce with pasta and serve.
Smoothie
2 Cups Vanilla Yogurt
1 Cup Fruit juice
3 Bananas
1 Cup Strawberries
Ice
1. Place Yogurt and Juice into the blender.
2. Add fruit and blend. (Frozen fruit may work in place of the ice)
3. Add ice and liquefy using a blender.
4. Drink and enjoy!
